Here’s the deal! Even though I prefer baking from scratch, when there’s a time crunch or I am feeling just plain lazy or just bogged down with a dreadful toothache and I have already committed to taking a dessert to a potluck, my go-to recipes are the ones that uses box mixes.
When our friends invited us for a cookout last weekend and I said that I will bring dessert, I was blissfully unaware of the fact that I would be nursing a killer toothache that just got worse as the week progressed. I had almost made up my mind to ask the husband to pick up a ‘tuxedo cake’ from Costco but somehow it just did not go with the whole cookout/grilling thing. So with just a couple of hours to spare, a quick search on the internet and a quick trip to the grocery store later I had this gorgeous S’mores Brownie all ready to grab and go!
And the big secret weapon, y’all – meet Ghiradelli Chocolate Brownie Mix. Just bake the brownie using the ingredients on the box mix according to the instructions on the box, arrange the broken pieces of graham cracker on it and toss in the mini marshmallows and stick it back into the oven and crank up the heat to ‘broiler’ mode. Take it out just as the marshmallows starts to toast/turns golden and arrange the broken up Hersheys bar and let the heat do its magic and make the chocolate all melty and gooey!
Ingredients for the Easy Peasy S’mores Brownie:
- Brownie box mix of your choice
- Ingredients as per box instructions
- 7-8 squares of graham chackers
- Few fistfuls of mini marshmallow brownies
- 3 bars Hershey Milk Chocolate Bar
Bake the brownie following the instructions on the box. While there was still 3-4 minutes left on the timer, I took it out, spread out the broken graham crackers in a single layer and top it with the mini marshmallows.
While you are arranging the crackers and mini marshmallows, be sure to crank up the heat on your oven to the maximum or if you have broiler, hit the broiler button.
Stick the pan back in to the oven on the top most shelf and keep a constant watch on the mini marshmallows. Once they start turning golden brown, take it out and immediately place the chocolate squares on it. The heat will melt the chocolate a little.
Serve while still slightly warm.
If you are planning to take it to a potluck or serve it later, just warm up the brownie a little before serving – it will become all ooey gooey again.
