One Minute Eggless Chocolate Chip Cookie in a Cup

2nd July 2014: A few days back I had posted a One-Minute Cookie in a Cup photo and someone asked me if I can help her with an eggless version. So after a couple of trials and errors, here it is. I liked the texture of cookie I baked with egg more but there is almost no difference in taste.
One Minute Eggless Cookie in a Cup

Ingredients: 

  • Flour – 3 tbsp
  • Butter – 1 tbsp,
  • Brown Sugar – 1 tbsp, firmly packed (you can use light or dark)
  • Granulated Sugar – 1 tbsp
  • Vanilla Essence – 1/4 tsp
  • Milk – 2 tbsp. (updated)
  • Pinch of salt
  • Chocolate Chips – 1 tbsp 
I made 2 batches of cookies. One in a mug and the second one divided in two small microwave safe bowls. Microwave the butter in the cup till it melts, for about 20 to 30 seconds and swirl it around. Whisk in the brown and white sugar briskly, using a fork. Add the vanilla essence, milk and a pinch of salt and mix well. Add the flour 1 tbsp at a time and mix well. Fold in the chocolate chips gently. Microwave on high for 45-50 seconds. Serve warm.
Note:  I greased the smaller bowls lightly with butter as I had mixed the cookie dough in a different bowl and then divided the dough into 2 equal parts and spread it out in the smaller bowls. It took about 1 minute 5 seconds for the cookies in the bowl to cook.
Note: The cookie will look a little underdone on the top when you take it out but by the time it cools down it will be done!

  1. I tried this out and it came out wonderful!Although I had to microwave it for 65 seconds.Thanks for the recipe 🙂

  2. I modified the recipe some since I can't have regular flour. I used coconut flour and replaced sugar with stevia. Since coconut flour absorbs liquid more than flour does I had to add extra almond milk but it was very yummy!! I will definitely make it again!

  3. I added a tad bit of Nutella because I didn't have very much chocolate chips left after making a pie for my sister. Still, it was absolutely delicious!

  4. I saw what Anonymous said and used 2 TBSP of milk instead of 2 tbsp. It came out light, fluffy, and delicious! I think I will double the recipe next time to make a bigger portion.
