Chocolate Banana Cuppies: Archita’s recipe: Know Your Blogger

This post was long… long… overdue!! Packing our lives up and moving back to Mason kept me away from doing it. I have been eyeing her ‘Awesomeness in a jiffy- Chocolate Banana Cake’ for a while – and what better day than today to use her recipe to make some Halloween themed muffins. This recreation is a part of Kolkata Food Blogger’s Know Your Blogger event.   A warm, immaculate and sincere person with a great sense of humor is how I would describe her. Her blog reflects what she claims – she is a big foodie! Hailing from a finance background, she now runs a playschool with her husband. And oh, did I forget to mention that she has an adorable six year old!  Needless to say, the muffins turned out awesome.

Ingredients:

  • Flour – 1 1/4 cup
  • Cocoa Powder – 1/4 Cup
  • Sugar – 3/4 Cup
  • Egg – 1 at room temperature
  • Butter – 1/3 Cup or 5.5 tbs, melted
  • Banana – 1 ripe, mashed 
  • Baking Soda – 1 tsp
  • Vanilla Essence – 1 tsp
  • Milk – 1/2 Cup (my addition – my batter had become too thick)
  • Chocolate Chip – 1/3 Cup (my addition to the recipe)
  • Salt – 1/8 tsp or a pinch (my addition to the recipe)
  • Coffee granules – 1/4 tsp (my addition to the recipe – takes the flavor of chocolate to another level)

Preheat oven to 350 F or 180 C. In a bowl, mixed all the dry ingredients together. In a separate bowl mix the ripe banana and melted butter and fold it into the dry ingredients. Then whisk in the egg . 

Line your muffin tin with desired liners – I chose Halloween themed. And bake for 12-14minutes or till done. Baking time may vary depending  on your oven. Insert a toothpick to check for doneness – it should come out clean. 
I made some icing by whisking together confectioners sugar (1/2 Cup), Cream Cheese at room temperature (2 oz), Butter at room temperature (1 oz), milk (added little by little till I reached the consistency) and a dash of pumpkin pie spice to it. Decorated a bit!

    toder shonge dekha korar dine, i saw amazing halloween themed cupcake paper cups and decoration stuff at giggles – tarpor bhablam eishob rubbish boye niye jabi ki kore – okhane aaro interesting jinish pabi… ekhon mone hochhe je niye nilei hoto!
